The much-anticipated restaurant was opened on February 2004. Today, it is number 6 on the Saint Pellegrino list of best restaurants in the world and winner of Best Restaurant in Americas award. The owner, Thomas Keller who is also involved in the restaurants French Laundry in Napa Valley and Bouchon, in Napa Valley and Las Vegas. Some say that Per Se in an urban interpretation of The French Laundry.
The prix-fixe menu consists of a nine-course vegetable tasting or a nine-course chef's tasting. Than enjoy some of the recommended dishes: cappuccino of forest mushrooms, oysters and pearls, chaud-froid, boeuf grillee and be sure to save some room for the "Coffee and Doughnuts" dessert.
