Mugaritz's menu is full of striking ideas: 'gnocchi' made from the famous sheep's milk cheese Idiazábal, spider crabs with Jerusalem artichokes, barbecue-smoked scalope of foie-gras, roasted banana with sea-urchin cream, hazelnuts and polipodium root powder with vanilla ice cream.
